Thanks Christine! My kids don't mind wheat as they have never had anything

else, but they weren't too hip to the apple raisin walnut bran with molasses

muffins. They were SO good! My almost 4 y/o said, " Where's the frosting

Mommy? "

Hi Chessie,

 

Coming from the mom of a very picky kid I have found that adding a handful

of vegan choc. chips (Tropical Source is very very good) to a standard

banana nut (but minus the nuts for my picky eater) muffin recipe and

replacing 1/4 cup of the white flour with whole wheat works well. So far I

haven't been able to add any more wheat flour without him complaining but I

am trying to gradually increase it. Pumpkin choc. chip is good too.

No problem. Here ya go.

1 C wheat bran

1 1/2 C whole wheat flour

2/3 C raisins

1 t baking powder

1 t baking soda

1 C milk (soy)

1/2 C molasses

3/4 C applesauce

1/4-1/2 C walnuts

2 T oil (of your choosing)

2 T flax seed beaten with 4 T water

1 1/2 t cinnamon or allspice or combo

2 t brown sugar (I used demarara)

2 t cinnamon

 

Preheat oven to 400. Beat flax seed with water or pulse in food procesor

til foamy, set aside. Mix wheat bran, flour, baking soda and baking powder

together; stir in raisins and nuts. In a separate bowl, mix applesauce,

milk, molasses, oil, flax seeds and spice. Add to dry ingredients and stir

until just moistened. Spoon into greased muffin tins. Mix brown sugar and

cinnamon together and sprinkle on top of muffins. Bake 15-20 minutes, or

until they pass the toothpick test. Let sit a minute or two and then eat!

 

Be warned that these don't keep well since they are so moist. Refregerate

them if you don't use them quickly. I got 36 mini muffins from this recipe.

love mini muffins, but so far they will only eat the non-bran variety. Does

anyone have healthy recipes for blueberry, orange-cranberry, poppy seed,

whatever, they they would like to share? Thanks so much!!
