My kids don't mind wheat as they have never had anything else, but they weren't too hip to the apple raisin walnut bran with molasses muffins. They were SO good! My almost 4 y/o said, " Where's the frosting Mommy? Chessie ********************* 1 C wheat bran 1 1/2 C whole wheat flour 2/3 C raisins 1 t baking powder 1 t baking soda 1 C milk (soy) 1/2 C molasses 3/4 C applesauce 1/4-1/2 C walnuts 2 T oil (of your choosing) 2 T flax seed beaten with 4 T water 1 1/2 t cinnamon or allspice or combo 2 t brown sugar (I used demarara) 2 t cinnamon Preheat oven to 400. Beat flax seed with water or pulse in food procesor til foamy, set aside. Mix wheat bran, flour, baking soda and baking powder together; stir in raisins and nuts. In a separate bowl, mix applesauce, milk, molasses, oil, flax seeds and spice. Add to dry ingredients and stir until just moistened. Spoon into greased muffin tins. Mix brown sugar and cinnamon together and sprinkle on top of muffins. Bake 15-20 minutes, or until they pass the toothpick test. Let sit a minute or two and then eat! Be warned that these don't keep well since they are so moist. Refregerate them if you don't use them quickly. I got 36 mini muffins from this recipe.
