great recipe for Thankgiving

I don't know about all of you but I have always missed the sweet potato

casserole with the marshmallows on top. Since we are unsure where we will be

for Thanksgiving and what will be available to eat, I made Thanksgiving tonight.

We had Tofurky, brussel sprouts, carrots and sweet potato casserole. It baked

the seet potatoes until they were very soft. Then I mashed them with Earth's

Balance margarine, a little brown sugar and put ricemallow on top. I baked it

with the tofurky for about 15 minutes until it was hot and then I put it under

the broiler for a minute or so until it browned. It was amazing. Just like I

remembered it. It could have been desert. I did basically the same thing for

Lily and I for a snack this afternoon. I baked a delicata squash with margairne

and brown sugar. It got all caramelly and she couldn't get enough so I didn't

get much. I saved half for the older kids adn they loved it too. I love squash

season.

All this talk about holiday food has me in the mood for some too. I think

I'm going to do Tofu, stuffing, squash baked with maple syrup drizzled on

it, mashed potatoes, carrots, spinach and gravy. MMM mmm. That will have

to be for tomorrow night though. Tonight I'm going to a birthday dinner for

my great aunt. She is 91 today. Luckily I won't be the only vegetarian

there so there should be something I can eat. :)

That sound so good. I love squash too! But I think the praline sweet

potatoes are my favorite!
