I make this when it's cold or if I feel like I'm getting a cold. It's a take the chill off the body soup. One of my comfort foods. Pizza Soup (version #2 ) 3/4 cup acini di pepe or orzo 1 small onion, chopped 1 cup mushrooms, sliced 1/2 green or red bell pepper, chopped 2 garlic cloves, minced 2 teaspoons olive oil 3 cups vegetable broth 1 1/2 cups pasta sauce 1 teaspoon dried basil 1/2 teaspoon Italian seasoning 2 Tofurkey Italian sausages, sliced into thick rounds Handful of shredded mozzarella for garnish when served In a large soup pot, boil the acini di pepe for about 10 minutes and drain. Meanwhile saute the onion, bell pepper, and garlic until onion is tender. Add the sausage and brown a little. Now place broth, sauteed veggies with sausage rounds, herbs, and acini di pepe into the soup pot, bring to a boil and simmer on low for about 10 to 15 minutes.
