Prudhomme's Cajun Cauliflower in Garlic Sauce recipe

I found this in a newspaper a few yrs. ago. Good cauliflower recipe, bursting

with flavor.

 

Prudhomme's Cajun Cauliflower

 

2 - 3 cups cauliflower florets2

2 tbls. butter or margarine

2 tsps. minced garlic cloves (I use 3)

1 tsp. Tabasco (I use 1/2 tsp.)

2-3 chopped cilantro leaves (parsley works too)

1/2 tsp. cajun seasoning

 

Bring 1 1/2 quarts water to a boil and blanch the cauliflower for about 3

minutes.

Drain well and set aside.

Place butter in a large skillet over a high heat. As soon as butter begins to

sizzle, add the garlic.

Cook stirring constantly until garlic is coated with butter, 30 seconds.

Add cauliflower and cook, stirring occasionally until it turned a slight

brown, about 4 minutes.

Remove from heat, stir in the Tabasco, cilantro and cajun spice. Toss well to

coat and serve.

 

*Note - I usually add sliced olives and a few rinsed and drained capers.

I don't know why. I just love 'em.
