I must confess I'm a newbie vegetarian, only about a year under my belt. My biggest challenge is that I work full time and I am a grad student, and finding the time to try new receipes has been a challenge for me. I come from a strict meat and potatoes background, and learning to be a little creative without the meat hasn't been that easy for me. I do have the support of my dear hubbie, who is not a vegetarian, but is willing to go along with my experiments. (Thank goodness) I am really looking forward to learning to cook a few more " staple " vegetarian dishes. Looking forward to chatting with you all!
