Guest guest Posted April 3, 2006 Report Share Posted April 3, 2006 Banana Muffins I am eating one right now with a tea, these are good. 2 cups whole wheat pastry flour 1/2 teaspoon sea salt 1 tablespoon baking powder 2 large, very ripe bananas 1 1/4 cups applesauce 1/2 cup dates 1/2 cup soy milk In a large bowl, combine the flour, salt and baking powder. In a blender, puree the bananas and dates; add the applesauce and salt. Mix well. Pour the banana mixture into the dry ingredients and stir until just moistened. Fill muffin cups with the batter and bake at 350 degrees for 30 minutes or until lightly brown and firm. Makes 6 large muffins. Quote Link to comment Share on other sites More sharing options...
