I mince, dice and chop veggies, it's very good for cutting biscotti before you bake it, I do like nori and all sea vegetables so I make veg. sushi rolls and use it for that also. The end of this knife is very ponted and sharp so if you pierce the veggie the blade with make a nice clean slice. You know I've used these knifes since I was in my teens and never cut myself (I better shut up, huh) and yet I always hurt myself with the potato peeler and the stapler on my desk.
