Vegetarian, but not vegan. AmyF HERMAN'S LEFSE Ingredients: 16 potatoes (or 8 cups) 1 cup evaporated milk ¼ cup butter 4 tsps. salt (divided) 4 tsps. sugar 3 cups flour Method: Peel, cut and boil potatoes with 2 tsps. salt. (Cook for approx. 45 min.) Drain and rice potatoes. Add ¼ cup butter, 2 tsps. salt, 4 tsps. sugar, then mash well. Allow potatoes to cool. When completely cold, add 1 cup evaporated milk and add, gradually, 3 cups of flour. Mash well to mix ingredients. Take 1/3 cup of the dough, form into a ball, flatten out on well-floured pastry cloth (or dish towel). Roll out as thin as possible. Roll up on lefse stick and transfer to heated grill (about 450 deg.). Turn, as necessary, to brown lightly on each side. Remove from grill and place half-folded lefse onto a clean dish towel.
