Guest guest Posted April 2, 2006 Report Share Posted April 2, 2006 Eat Till You Burst Spaghetti Squash I love this for lunch, sprinkle a little cheese on top and have a wheat roll and a small salad, I used to take this to work in 2 containers and warm sauce and squash in the microwave. Its a nice work lunch if you have a microwave. 2 spaghetti squash 2 tbsps. oil 3 garlic cloves, diced 2 onions, diced 2 celery stalks, diced 1 pepper, diced 1 tsp. basil 1 tsp. oregano 1 tbsp. garlic powder 2 cs. tomato sauce In a large pot, combine the whole spaghetti squash with 5 cups water; boil over medium heat for 35 to 45 minutes, until easily punctured with a fork. Remove from pot, cut in half, scoop out the seeds using a fork; gently scoop out the spaghetti squash strands, placing them in a large bowl. In a frying pan, heat the oil over medium-high heat; add the garlic, onions, celery, pepper and seasonings and saute for 7 minutes, until vegetables are tender. Add to the squash.
