I also dice up yellow squash, zucchini, pumpkin etc and use in stewed tomatoes or soup/stew. and bananas, strawberries, blueberries, rhubarb, etc for smoothies or pies. I'm lucky enough to have a 2nd refrigerator/freezer, so I have extra storage space. Veggies in season going to waste makes me crazy.
