Guest guest Posted April 2, 2006 Report Share Posted April 2, 2006 Maple Poached Pineapple 1/4 cup pure maple syrup, more for serving 3 tablespoons rum, optional 16 ounces fresh pineapple chunks 1/2 cup plain lowfat yogurt Combine maple syrup and rum in a heavy nonreactive saucepan over medium high heat. Bring to a boil. Add pineapple and simmer 2 minutes. Stir and simmer another 2 to 3 minutes or until pineapple is tender. Serve poached pineapple with maple syrup and yogurt. Makes 4 to 6 servings.
