Guest guest Posted April 1, 2006 Report Share Posted April 1, 2006 Grain Cake 1 cup oat bran 1/2 cup rice bran 1/3 cup corn meal (fine) (optional) 1 cup whole wheat flour muffin mix or oat bran date muffin mix or any type of muffin mix. Or make from scratch by adding a teaspoon of baking powder to whole wheat or oat flour mixture instead of muffin mix. (I use oat bran muffin mix)You can make from scratch by adding a teteaspoon of baking powder to one cup of whole grain flour.) Don't use aluminum-based baking powder. 1/2 cup chopped walnuts 1/3 cup chopped almonds 3/4 cup of almond milk, oat milk, ricemilk, soy milk, or juice 1/2 cup chopped dates 1/4 cup raisins 1/2 of a tub of tofu, usual size found in most markets or if you eat eggs, 3 egg whites 1/3 cup pomegranate concentrate or any other sweet liquid flavoring such as fruit juice concentrate. Mix all together until mixed well, don't mix too much, though. Bake in a square baking pan at 350 degrees F until solid inside and light brown on top and sides. Cool, cut in squares. Serve like brownies. You can leave out the baking powder and bake the grain as flat cookies on a cookie sheet to lower the sodium content of the mixture.
