Lemon Bread 6 Tbls. butter or margarine s(oftened to room temp.) 1 cup sugar 2 tsps. grated lemon peel 2 large eggs 1 1/2 cups flour 1 tsp. baking powder 1/2 tsp. salt 1/2 cup milk or soy milk 1 cup chopped walnuts or pecans (optional) Preheat oven to 350 degrees. Grease and flour one 8X5 loaf pan. Cream butter and sugar until light and fluffy. Add grated lemon peel and mix. In a separate bowl mix flour, salt and baking powder, stir well to blend. Stir the dry ingredients into the creamed mixture, when blended add the milk and blend well. Place mixture into prepared pan. Bake 40 to 45 minutes until toothpick inserted comes out clean. Cool for 10 minutes and remove from pan, continue cooling. Note: If you want to glaze top you can blend, 1 Tbl. lemon juice (little more if needed) with 1/2 cup powdered sugar, mix and drizzle across the top. Talk is cheap.
