The Anasazi Native Americans were an ancient tribe living in our area in the past. Some people call this the Aztec Bean. Both beans are grown locally in Colorado. The Anasazi Bean is a dark reddish and white color. This bean has a great texture and taste making it a good bean to use for veggie burgers or loaves. The Pinto bean is my favorite for taste because it makes it's own wonderful flavored sauce with no need for additional spices, etc. Refried pintos for dip, burritos , etc. are fantastic. Just type in Anasazi Bean on your favorite search engine and you will find several sites with pics of this bean.
