Guest guest Posted March 30, 2006 Report Share Posted March 30, 2006 The Native American Indians have a lovely tradition and story about The Three Sisters (corn, beans and squash). Traditionally a soup is made from these three ingredients, with some cooks adding additional ingredients. I made this for a friend who was visiting from back east who had not heard of the ledgend or the soup. The following is my recipe which I prefer. She is of Native American heritage so it was great fun to serve this as a way to honor her and her people. Three Sister's Soup 2 cups corn ( you can mix white or yellow hominy if you like) 2 cups Anasazi Beans (soaked overnight and cooked until tender)or your favorite canned beans. I prefer Pinto or Anasazi for their flavor 2 cups cubed squash( I used Zuccini) 1/2 cup chilis ( I used roasted Pueblo mild green chilis) 2 large tomatoes(peeled and cubed) 1 small onion diced 3 garlic cloves diced 1 cube veggie bouillon Optional: add cilantro, basil or favorite herb Optional: IF you prefer a stew like thickened soup, mix 2 tablespoons olive oil and 2 tablespoons flour and stir into your soup after the vegetables are done. Sautee onion and garlic in a scant amt. of olive oil until translucent. Not browned Add all ingredients and simmer until squash is tender but not soft. Serve with tortillas,flat bread or Indian Corn bread In season I use fresh shucked corn.
