This is the famous promised coconut cookie recipe. This does look tasty also.

It will be in line after Amy's seitan. Also you included inspiration from Led

Zep. Does this digest signify the end of the world? Look at the digest

number. :.>)

Anzac Cookies (called biscuits in Australia and New Zealand)

These are a nice crispy, perfectly round egg less cookie. These are

good frozen or crumbled over soy or rice ice cream.

 

Anzac Cookies (Biscuits in Australia and New Zealand)

 

1 cup quick cooking oats (not instant)

3/4 cup flaked coconut

1 cup all purpose unbleached flour

1 teaspoon baking soda

1 cup sugar

1/2 cup butter (I haven't tried this recipe with a substitute)

1 tablespoon maple syrup

2 Tblpns. boiling water

 

Preheat over to 350 degrees

Mix oats, flour, sugar and coconut together in a large mixing bowl

and set aside.

In a small saucepan over low heat, melt syrup and butter together,

Mix the baking soda and boiling water together, add melted butter and

syrup and stir to mix well. Now stir in the dry ingredients (oats,

sugar and coconut).

Grease cookie sheet and form dough into small round balls (dough will

be crumbly). Place balls on cookie sheet and flatten.

Bake for 18 minutes or until golden brown. Transfer to wire rack to
