pineapple bars

Hi everyone,

 

I usually don't post much but I tried the pineapple bars from the recipe file

and had to let everyone know how great they are. First of all I had some extra

crushed pineapple left over and I looked through all my cookbooks for a

pineapple cookie. After going through over 20 cookbooks and not finding a

recipe, I next went through my mother's baking card index once again nothing. I

went on the internet and nothing. Of course the last place I looked (our files

here) I found 2 pineapple recipes. I think I learned my lesson( to look here

first!!!). Well I asked my 5 year old which she wanted and she chose the bars.

My next problem I didn't have the 2 cups of pineapple the recipe called for, but

I did have a can of mandarin oranges. So I used a half cup of cut up oranges to

add to the pineapple. The good news is all four of us love the bars!! (my

handicapped mother lives with my family). The reason that this is amazing is

that I can never find anything that we all like. So

thank you to whoever posted this recipe. This recipe is definitely a keeper

for this household.
