Lily It was discussed quite a bit in the Feral group, and this ended up being the recipe I used: http://bunnyfoot.blogspot.com/2005/05/praise-seitan.html I did grind my oats, and my tapioca, before adding; not sure if that makes a difference, and I kneaded-folded-stretched more than the 6 times mentioned in the recipe.
