Curried Seitan Salad

Made seitan the other day, and this is what I decided to do with it...

it was GOOD!

 

Curried Seitan Salad

 

1 loaf seitan, diced

1/2 cup vegannaise

2 tbsp golden raisins

2 tbsp pistachios

1 tbsp curry powder

1/4 of an apple, diced (not peeled)

 

Mix all together (I put them in a closed plastic container and

shake-shake-shake). Serve over romaine lettuce.

How does it look Amy? I'm quite curious about it, was the seitan hard

to make?

It was easy to make, especially if you've made bread, and if you buy

gluten flour, vs. using whole wheat flour and having to rinse away the

non-gluten parts of the flour (actually, I've never tried it that

way.but certainly can't imagine it to be easier! *lol*).
