Guest guest Posted March 29, 2006 Report Share Posted March 29, 2006 This sauce recipe is super easy and very quick to make. i got the recipe from some little index cards called Hawaiian Vegetarian Recipes as a gift back in 1990 when i was leaving the islands. So many of those recipes i still use often and this is one of them. Don't fret about measuring here, just " eyeball it " , as Rachel Ray says. Easy Tomato Sauce for lasagne or casseroles 1/2 cup onion, finely minced 1 carrot, grated 2 cups fresh mushrooms, sliced or chopped 1 Tbs. olive oil 2 cans (8 oz each) tomato sauce 1 can (6 oz ) tomato paste 1 tsp dried oregano 1 tsp dried basil In hot oil, sauter onion and mushrooms until tender. Add carrot, tomato sauce, tomato paste, oregano, and basil. Simmer for 10 minutes. Add a bit of water gradually while stirring if sauce is too thick.
