This one fits on both counts and it just screams yummy summer goodness. Cucumber Salsa 2 medium cucumbers, peeled, seeded and chopped 2 medium tomatoes, chopped 1/2 cup chopped green pepper 1 jalapeno pepper, seeded and chopped 1 small onion, chopped 1 garlic clove, minced 2 Tbs lime juice 1 tsp minced fresh parsley 2 tsp minced fresh cliantro 1/2 tsp dill weed 1/2 tsp salt In a bowl combine the ingredients. Cover and refrigerate for 1 hour. Serve with chips or on the table as a condiment. Yield: 4 cups Nutritional analysis: One serving (1/4 cup salsa) equals 11 calories, trace fat (trace saturated fat), 0 cholesterol, 76mg sodium, 2g carbohydrate, 1 g fiber, trace protein.
