[recipe] Cucumber Salsa ~ vegan

i know i read a few digest posts that recommended eating

cucumbers for better kidney function, and also some people

were looking for diabetic recipes. This one fits on both

counts and it just screams yummy summer goodness. :)

 

Cucumber Salsa

 

2 medium cucumbers, peeled, seeded and chopped

2 medium tomatoes, chopped

1/2 cup chopped green pepper

1 jalapeno pepper, seeded and chopped

1 small onion, chopped

1 garlic clove, minced

2 Tbs lime juice

1 tsp minced fresh parsley

2 tsp minced fresh cliantro

1/2 tsp dill weed

1/2 tsp salt

 

In a bowl combine the ingredients. Cover and refrigerate for

1 hour. Serve with chips or on the table as a condiment.

Yield: 4 cups

 

Nutritional analysis: One serving (1/4 cup salsa) equals 11 calories,

trace fat (trace saturated fat), 0 cholesterol, 76mg sodium,

2g carbohydrate, 1 g fiber, trace protein.

Diabetic exchange: Free food.
