Guest guest
Phew! Just finished reading digests #600, 601, & 602. Time to post another Spring favorite recipe. This one is simply divine. Now off i go to drive my daughter to work. Happy Tuesday! Oriental Asparagus Salad 1 pound asparagus, cut into 2 inch pieces 2 Tbs. soy sauce 1 Tbs. vegetable oil [i use peanut oil] 1 Tbs. vinegar 1 tsp. sugar 1 tsp. sesame seeds, toasted 1/2 tsp. ground ginger [i used fresh] 1/4 tsp. ground cumin In a saucepan, cook asparagus in a small amount of water until crisp-tender, about 3 to 4 minutes. Drain well and place in a large bowl. Combine the soy sauce, oil, vinegar, sugar, sesame seeds, ginger, and cumin; pour over asparagus and toss to coat. Cover and chill 1 hour. Drain before serving. Yield: 4 servings ~ pt ~ Each leaf, each blade of grass vies for attention. Even weeds carry tiny blossoms to astonish us. -Ê Marianne Poloskey, Sunday in Spring
