However, stevia is a natural herb, which can actually lower blood sugar. I have tried cooking with it with mixed results. I think it works best in a recipe that has another flavoring such as a pudding or a fruit or pumpkin pie. If it doesn't have another flavoring, I think it tastes best with maybe part sweetener and stevia. I have tried baking with it. Stevia changes the chemistry of baking. Sweeteners change into a sort of liquid when baking and also they somewhat chrystalize. I think to make it taste good and to make the texture come out right, I was thinking the best thing would be is to substitute applesauce or pruune puree instead of the sugar. I have not really experimented with this yet. Someone asked if Splenda is good vs. stevia. Splenda is made from a lot of chemicals. There have been been lots of adverse reactions to Splenda and all artificial sweeteners. I don't know of any side effects from stevia and it even reduces blood sugar. Splenda is made from a chlorinated sucrose derivative. I know that this is a vegetarian group and thus allows sugars. There is a big difference in sugars. Whit and brown sugar and turbanado and fructose are all processed with chemicals. Chemicals like phosphoric acid, formic acid, preservatives and bleaching agents. We use honey in almost all of our sweet things. We use organic sugar (not processed with chemicals) in recipes that honey would change the chemistry. I would urge people to use things like molasses, honey, Sucanat, rice syrup, barley malt syrup,etc. They may be a little more expensive but it is more expensive getting cancer operations, doctor visits, knee replacements and quality of life is priceless. I know that the rare times I have sugar, my skin will start itching. and it will be because I either had sugar or something with chemicals. Personally, I think white sugar is more of a problem in the West than fats in foods. To see how white sugar became so popular read " Sugar Blues " GB Does anyone have a recipe to try using stevia? I would like a TNT I did try a muffin recipe from a book last year and I didn't care for the taste, could of been a bad recipe. Was afraid to try another unless someone had a recommendation.
