I take a package of rice stick noodles and boil for 3 minutes, drain and cut with the cooking scissors, set aside. I then put all this in the food processor and grate: 2 celery stalks, 1 large carrot, 2 garlic cloves, 1/2 onion, 1 zucchini, 1 peleed chayote, chuck of cabbage. I hand dice a 1/2 yellow bell pepper and 1/2 red bell pepper. I then heat up the wok or Dutch oven with some veg. broth and stir fry the noodles with the grated veggies and add some salt, pepper, red pepper, flakes and Mrs. Dash. As the broth evaporates I keep adding a few tablespoonfuls at a time. About 5 minutes before it's done I toss in a hadful of frozen peas and broccoli florets. That's it. A Philippino chef taught me how to make this about 15 years ago. Kids like the rice noodles and if you add a cooked sliced tofu dog that usually give you no problem and eat it right up. Guest guest Posted March 29, 2006 Report Share Posted March 29, 2006 hi, all, I'm Filipino so I've got a few tips for making pancit -- saute your garlic and onion first in a bit of oil, then add the julienned veggies, then the rice noodles -- and a bit of veggie stock. sauteeing the garlic until it's *just* golden and the onion until it's starting to caramelize around the edges will give your pansit just a bit more character. the pic looks fabulous, donna! thanks for sharing. rice stick noodles also come in different sizes. the one we use most for stir-fries is called " bihon " -- try finding a Chinese brand (it may say " First Class China bihon " on it) -- it's tougher and sturdier and won't break up while stir-frying. I also don't soak my noodles, just rinse it and let it absorb the juices from stir-frying and the veggie broth, that way the flavors really get into the noodles. hth! stef -- http://www.stefoodie.net http://www.noodlesandrice.com (with b5media) http://www.beyondadobo.com ps tofu can be marinated and fried before adding to the dish -- yum! you could also serve it up as a side dish to the noodles -- the noodles being the main entree -- cubed, fried, and served in a dipping sauce of vinegar-soysauce-blackpepper, chopped onions-minced garlic-minced ginger if you can handle the strong tastes of these raw additions.
