Guest guest Posted March 27, 2006 Report Share Posted March 27, 2006 Gazpacho Salsa 3 cups (4 medium) tomatoes, finely chopped 1 cup cucumber, seeded and finely chopped 1/2 cup red onion, finely chopped 1/2 cup yellow sweet bell pepper, finely chopped 1/4 cup fresh cilantro, chopped 1 TB red wine vinegar 2 tsp. olive oil 1/2 tsp. salt 1/4 tsp. sugar 1 small serrano chili peppers, seeded and finely chopped 2 cloves garlic, minced Tortilla chips Combine all ingredients except chips in a bowl. Cover and chill for at least 1 hour or up to 2 days before serving. Serve with tortilla chips. Makes about 4 cups (sixteen 1/4 cup servings). Nutrition Information: Per serving = calories 18, total fat 1 g, sat fat 0 g, cholesterol 0 mg, sodium 41 mg, carbs 3 g, fiber 1 g, protein 1 g, vitamin A 0%, vitamin C 31%, calcium 1%, iron 1%.
