Green Rice

Quick & Easy

 

2 cups cooked (in veggie broth) brown rice

1 package frozen chopped spinach

1 onion chopped

Small amount of olive oil

Handful chopped pecans or almonds

Salt (if needed, veggie broth is usually salty enough) & pepper

 

Cook rice. Cook spinach and drain. Saute onion in a small amount of olive

oil until translucent. Add spinach and cook briefly until flavors blend. Add

spinach mixture to rice, add seasoning and nuts for crunch and a nutritious

boost! Enjoy!
