Guest guest Posted March 25, 2006 Report Share Posted March 25, 2006 Banana Chips 4 bananas, slightly under-ripe 2 to 3 cups canola oil Kosher salt, to taste Freshly ground pepper, to taste Work with one banana at a time. Peel a banana and slice it very thinly. Place the oil in a deep fryer or heavy-bottomed pan and bring to 325 degrees over medium heat. You need at least 1/2-inch depth of oil. Add the banana slices in batches (the amount will depend on the size of your pan). Fry until the chips turn crispy and become golden brown, 1 to 2 minutes. Remove the bananas with a slotted spatula and transfer to paper towels. Spread out the slices so that the chips can drain and dry in a single layer. Lightly sprinkle with salt and pepper, if desired. Repeat with the remaining bananas. The chips will get soggy if they are left in a humid area or refrigerated. I don't have a dehydrator and from a store they can be loaded down with unneccessary preservatives.
