Guest guest Posted March 25, 2006 Report Share Posted March 25, 2006 Luscious Lima Beans nonstick cooking spray 1 cup celery, chopped 1 cup onion, chopped 1 garlic clove, minced 1 cup chopped red pepper 10 oz. package frozen lima beans, thawed 10 oz. can chopped tomatoes with green chilies, undrained 1 cup low sodium vegetable juice 1 tsp. basil 1 bay leaf Coat large nonstick skillet with cooking spray, heat until hot. Saute celery, onion, garlic, and pepper until tender crisp. Add remaining ingredients stirring well and bring to boil. Cover, reduce heat to simmer until lima beans are tender.
