I'm currently ISO more tofu recipes, I use it a lot but don't have a lot of recipes. I need to go through the files and look, I'm sure there are tons there too. What university do you work for? I have also been a vegan (no milk, eggs or cheese) for most of that time (but also over 65 years). I don't just live on lettuce and tomatoes as some new vegans do. I have always had plenty to eat. Often, too much. My frige, freezer and pantry are always filled with vegan goodies. Most people would be surprised how much food you can find in a regular large supermarket, that also happens to be vegetarian or vegan. All of the produce, tofu, much of the canned goods, frozen food, much in the boxed goods, all of the grains, all of the juices and some in the specialty foods, such as Mexican and Oriental, Italian, Greek etc. I read labels very carefully. No mayo, no creamy dressing, no wedding cake, Worcestershire sauce without the anchovies. I don't eat out too much but when I do, I know the owners and cooks personally. To help insure that the employees are being honest with me about the ingredients (which they are not always)I ask to see the labels and I also let them know that I am deathly allergic to even small amounts of eggs and dairy(which I'm not, at least that I know of). Fearing lawsuits, they get honest real quick. And I also eat at vegetarian/vegan restaurants, also where I personally know the owners and cooks. I have worked at a large university for 25 years and the department that I work in has a full kitchen for the employees, so I fix my own vegan lunch everyday. The manager of the university food services/cafeteria is also a vegetarian so she makes sure there are vegetarian meals available daily and at special events (dinners, dances etc.) and much of it is also vegan. Sorry for so much info, but I just thought I would pre-answer other questions that I thought some of you might have (and also for new vegetarians and vegans). " Be kind to animals... I'm so jealous that my family didn't teach me the compassionate lifestyle as I was growing up. It took me 40 years to figure it out on my own !!
