Apple Cole Slaw

 

~~~Cole Slaw~~~

2 cups packaged Cole slaw mix

1 unpeeled tart apple, chopped

1/2 cup chopped celery

1/2 cup chopped green bell pepper

 

~~~Dressing~~~

1/4 cup vegetable oil

2 TB lemon juice

2 TB honey OR Karo corn syrup

1 tsp. celery seed

 

In a large salad bowl, whisk all the Dressing ingredients together.

 

Add the Cole slaw mix, apple, celery and green pepper and toss to coat. 

 

Yield:  4 servings.
