Guest guest Posted March 24, 2006 Report Share Posted March 24, 2006 Brown Rice Supper Dish 1 c. uncooked brown rice 1 medium, 1/2 c. chopped onion 2 minced garlic cloves 2 tbsps. oil 1 medium, 1 c. zucchini, coarsely chopped 1 medium, 1 c. green pepper, chopped 1/2 tsp. oregano leaves 1/4 tsp. salt 1/8 tsp. pepper 2 medium tomatoes, 2 cs. peeled and coarsely chopped 16 oz. can kidney beans, drained 4 ozs. 1 c. shredded cheddar cheese Cook rice as directed on package, omitting salt. In large skillet, saute onion and garlic in oil until onion is tender. Add zucchini, green peppers, oregano, salt and pepper. Cook vegetables until crisp-tender, about 5 minutes. Add tomatoes and beans. Cover and heat thoroughly. Spoon hot rice onto serving platter. Spoon vegetable mixture over rice. Sprinkle with cheese. Makes 7 servings.
