Meanwhile, saute in olive oil: 6 ounces finely chopped ginger root 16 ounces chopped onion 4 teaspoon (approx.) finely chopped garlic 1-2 tsp. turmeric Caraway seed Red pepper (to your taste, watch out, it's HOT) Dash of powdered cardamom A few cloves A sprinkle of powdered cinnamon Saute until onion is nicely browned. Mix with cottage cheese to your taste. Cut baked potatoes in half lengthwise, scoop out the insides and mash. For each potato half, mix in half of the above mixture with the mashed potato and replace in the potato skins. Put a slice of cheddar cheese on top and melt in the oven. Garnish with fresh pineapple, radishes, and alfalfa sprouts. These are truly POTENT potatoes! So don't eat more than two at a time. Serving suggestion: Serve with salad and a bowl of yogurt.
