If you can't find vegetarian ch*ckn flavored bouillon

granules, just use some vegetarian no-chicken broth

by Imagine brand that comes in the cartons; that stuff

is so good and it is organic. Use it to replace the water

in this recipe... heat it up to boiling & proceed. :)

 

Cashew Broccoli Casserole

 

1 package (12 oz) Quorn brand tenders, thawed

[you can make this vegan by using MSF meal-starter strips]

1 medium onion, chopped

2 cups frozen broccoli cuts

1 3/4 boiling water

1 cup uncooked rice

1 jar (6oz) sliced mushrooms, drained

1 Tbs vegetarian ch*cken bouillon granules

1 tsp ground ginger

Pepper to taste

3/4 cup salted cashews, divided

 

In a large bowl, combine the first nine ingredients.

Transfer to a greased shallow 1 1/2 qt. baking dish.

Cover and bake at 375 degrees for 45 to 55 minutes

or until rice is tender and broccoli thawed.

Stir in 1/2 cup of the cashews. Spinkle with remaining

cashews.

Yield: 4 servings
