i just finished reading digests # 622-626 so i thought

it was time to share another one of my favorite recipe.

This one i found years ago in a Taste of Home magazine.

i baked them to take to a potluck and everyone raved;

they are so moist and delicious you can't stop at eating

one! These bars pack quite well so they are perfect

lunchbox treats and definitely potluck pleasers.

So if you have some bananas that have gone past your

liking for eating, mix up a batch of these bars. :)

 

 

Frosted Banana Bars

 

1/2 cup soy margarine

1 1/2 cups sugar

2 eggs

1 cup sour cream or yogurt

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1/4 tsp salt

2 medium ripe bananas, mashed (about 1 cup)

 

Frosting:

1 package (8oz) lite cream cheese, softened

1/2 cup soy margarine, softened

2 tsp vanilla extract

3 1/2 to 4 cups confectioners' sugar

 

In a mixing bowl, cream margarine and sugar.

Add eggs, sour cream and vanilla. Combine flour,

baking soda and salt; gradually add to the creamed

mixture. Stir in bananas. Spread into a greased

15x10x1 inch baking pan. Bake at 350 degrees for

20 to 25 minutes or until a toothpick inserted in

middle comes out clean. Cool. For frosting, in a mixing

bowl, beat cream cheese, margarine and vanilla.

Gradually beat in enough confectioners' sugar to achieve

desired consistency. Frost bars. Store in refrigerator.

Yield: 3 to 4 dozen depending on how you cut them
