This is a really good old fashioned date loaf. It was one of the

very few recipes I found of my Gran's.

 

" Date Loaf "

 

1 3/4 cups of flour

1 cup sugar

1 tsp. baking soda

1 lg. egg slightly beaten

2 Tblsp. butter or canola margarine

1 cup dates chopped

1 cup boiling water

1/2 tsp. salt

1 tsp. vanilla

* optional 1 cup chopped nuts (walnuts or pecans)

 

Place dates and butter in large bowl with the one cup of boiling

water, stir and let sit until cooled one houir.

Heat oven to 350 degrees and grease a 9 X 5 loaf pan.

To the date mixyure add beaten egg, vanilla and sugar.

Mix the flour, baking soda and salt together in separate bowl.

Add dry ingredients to the batter and stir until moistened.

* Add nuts if using nuts and mix well.

Pour batter into prepared pan.

Bake in oven for 50-60 mins. or until toothpick inserted comes out

clean.

Cool 10 mins. on wire rack. Remove from pan and continue cooling on

wire rack.

 

This is wonderful with a thin layer of cream cheese on top of a slice.
