Christie-

I don't know if your polenta is cooked or not. We make ours from

scratch. So when I slice the loaf, I know its already cooked. If its

already cooked, its ready to use. Just slice & grill or whatever else

you want to do.

 

Polenta is wonderful for picking up the flavors of anything you cook it

with. I'd braise the spinach in a little broth, toss in the crumbled,

cooked polent to sop up the fluids. Cook spinach till wilted, just

turned green. Maybe with some chopped onions, and grilled minced

garlic. Add whatever cheese you prefer, and stuff the red pepper. Spray

with olive oil mist, wrap in foil, and grill. Or don't wrap in foil in

girll in your oven.
