Guest guest Posted March 22, 2006 Report Share Posted March 22, 2006 Well, i doubt the Amish use veggie bacon strips, but here is a great recipe i converted from a quick cooking magazine recipe into a vegetarian delight. We all love it here and it makes a great Sunday morning breakfast with fresh brewed coffee, toast and fruit. [count down: digests# 612, 613, & 614] Amish Breakfast Casserole 1 package (5 oz depending upon brand) vegetarian bacon strips* Non-stick cooking spray 1 meduim sweet onion, chopped 6 eggs, lightly beaten 4 cup shredded hash brown potatoes, thawed 2 cups shredded cheddar cheese 1 1/2 cups (12 oz) small curd cottage cheese 1 1/4 cups shredded Swiss cheese In a large skillet that has been sprayed with non-stick cooking spray, cook bacon and onion until bacon is crisp. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9x2 inch baking dish. Bake uncovered at 350 degrees for 35 to 40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
