Black Bean and Artichoke Burritos 1 (15oz.) can black beans, rinsed and drained 1 tbl. vegetable oil 1 (10 oz.) can artichoke hearts, drained and sliced 1 onion, chopped 3 cloves of garlic, crushed 8 (10 inch) flour tortillas (no lard) 2 cups sharp cheddar cheese (or vegan cheese) 1 large tomato, diced dash of cumin Optional - minced jalapeno pepper Optional - cilantro, chopped Place black beans in skillet and bring to a boil. Cook on medium flame and mash a little with the fork until they become slightly pasty and resemble refried beans. Heat oil in separate skillet and add artichoke hearts, onion, garlic, cumin and jalapeno if using. Saute until artichokes become golden brown. Place tortillas one at a time in a hot skillet until they are warmed. Spoon beans on tortillas and top with artichoke mixture, add cheese and tomato. Fold in sides and roll up. They would work great in this recipe and make a quick-easy dinner for tonight.
