Chayote Saute 2 chayotes 2 onions 3 tbls. olive oil 2 cloves of garlic, squeezed 1/2 tsp. dried oregano 1/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. red pepper flakes Peel chayote, cut in half lengthwise , seed and cut into semi thick slices. Boil chayote in water for about 7 minutes until it's tender but firm and drain. Cut onion in half and then thin slices and separate the slices. Heat oil in medium skillet and saute onions, garlic, pepper flakes and oregano for a few minutes, add chayote and continue to saute about 8 more minutes, until chayote is slightly golden brown.
