continues! *lol* Time for another recipe. :)

 

This makes any dinner seem like a special occassion.

i have also just eaten this as a meal in itself with a bowl

of fresh veggies. Great served with a bowl of vegetable

chowder or tomato soup for dunking.

 

Spinach Garlic Bread

 

1 loaf French or Italian bread

1 medium onion, chopped

2 garlic cloves, minced

3 Tbs olive oil

1 pkg (10 oz) frozen chopped spinach, thawed and well drained

1 Tbs grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp fennel seed, crushed

1 large tomato, chopped and seeded

1 1/2 cups shredded mozzarella cheese

1 Tbs dried basil

chopped fresh parsley, optional

 

Cut bread in half lengthwise. Place with cut side up on a

baking sheet; set aside.

In a skillet, saute onion and garlic in oil unti tender.

Add spinach and stir until heated through. Remove from

the heat and stir in the Parmesan cheese, Italian seasoning

and crushed fennel seed; mix well. Spread evenly over bread

halves.

Sprinkle with tomato, mozzarella and basil. Bake at 400 degrees

for 8-10 minutes or until cheese is melted and bread is heated

through. Garnish with parsley if desired. Cut into slices and

serve immediately.

Yield: 8-10 servings.
