Hi all. i just got through reading digests# 603,604, & 605,

so now it is time to share another recipe! :)

 

This one has an unusual name, but it is because i had

to come up with a yummy dessert for my son to pack and

make when he went on a boyscout campout; you had to

be able to cook it over a campfire or cookstove.

The direction are a bit vague because you simply have to

watch it cook and play it by ear depending upon the heat

of your cookstove or fire. But don't let that scare you away

from trying this. It gets eaten up and is loved by everyone

who tries it ~ a huge hit at any outdoor gathering.

Now i mixed together the dough's dry ingredients and

packed them in a plastic bag, and my son just mixed the

milk in at the campsite before dropping it on the fruit

filling mixture.

 

BBQ Cherry-Pineapple Cobbler

 

1 can cherry pie filling

1 can crushed pineapple

2 Tbs cornstarch

 

Mix this together in a dutch oven and heat through until

it bubbles and gets thick.

 

6 Tbs butter or margarine

2 cups flour

2 Tbs sugar

3 tsp baking pwdr

1 tsp salt

1 cup milk

 

Mix together the flour, sugar, baking powder, and salt.

Cut the butter in using a fork or pastry cutter, until the

texture is coarse crumbs. Stir in one cup of milk until just

blended and moist. Drop on top of bubbling fruit in 12 equal

dollops. Cover and cook for 30 minutes or until toothpick

inserted into biscuit comes out clean.

Serves 12 happy campers!
