Guest guest Posted March 22, 2006 Report Share Posted March 22, 2006 North Country Rice 1 cup long grain white rice 1/4 cup chopped walnuts, divided 1 cup crumbled gorgonzola or blue cheese, divided 2 jarred roasted red peppers, chopped, divided 1/2 pkg. (5 oz.) frozen leaf spinach or escarole 1. Cook rice according to package directions. 2. In a large mixing bowl, combine 2 tablespoons walnuts and 1/2 cup gorgonzola. Stir in all but 1 tablespoon chopped bell pepper; mix well. 3. Cook spinach according to package directions; drain well; add to cheese mixture. 4. Blend warm rice with cheese mixture; mix well.
