Gazpacho

 

4 large tomatoes, seeded and diced

1 can (8 oz.) tomato sauce

3 TB tomato paste

1 large onion, finely chopped

1 celery rib, finely chopped

1/3 cup white wine vinegar

1/8 cup vegetable oil

1 TB fresh dill, chopped or 1 tsp. dried dill weed

1 TB fresh oregano, chopped or 1 tsp. dried oregano

2 cloves garlic, minced

1/2 tsp. salt

1 tsp. fresh jalapeño pepper or pickled jalapeño pepper, chopped

3-1/2 cups water

2 cucumbers, seeded and finely chopped

 

Place all ingredients in a large bowl. Stir to combine.

 

Serve chilled and topped with 1 teaspoon of chopped onion or cilantro.
