Hi All--Just Checking in! Tuesdays are my long days and even though I

check my e-mail in the A.M., today was a record! Took me awhile to

download, but when I finally got thru all my chores, I've been kicking

back and going thru all the messages 1x1. I'm thinking maybe this has

been a busy day on the net, or maybe I'm not quite ready for prime time

yet!!!! LOL, just kidding. I love going thru all these messages and all

the wonderful recipe ideas. Got to say I receive from Feral and Veg and

another list, plus some more, but, the bulk was from the two veggie

groups! I just want to thank you all again who are willing to spend the

time to post and discuss such great ideas for eating.

My contribution for a way to use polenta, is that it is very good placed

in the bottom of a soup bowl, and then to have some thin but tasty soup

(like vegetable --) poured over it. It adds a little thickness to the

soup and also is fun to dip down into while eating the broth.

As for the cold foods--I like a lot of things served cold the next day,

because the flavors have blended so well and the texture has

solidified...and has anyone else noticed that things seem to be more

salty when they have chilled and blended?

...but, my favorite is to bring a cold Bocaburger to work to eat at

lunchtime. My friend and I both do this. When we are making our lunches

in the mornings, we just zap a boca burger patty in the microwave (my

favorite is the grilled garlic) and then make up a regular little burger

out of it. Mine have lettuce, onion, tomatoes, horseradish, mustard,

catsup -- and whatever else I can think of. The patties really lend

themselves well to not having to be hot. Another added bonus is that all

the kids at Mother's Day Out are so curious about what we are eating.

Since we're eating all the neat veggies and whole wheat buns and veggie

patties, that makes it seem like something desirable to them also. I

kind of feel like we're giving them a good example without proselytizing.

Thankyou all! Paula
