I f she was inviting all of us over, I think we should know what is for dessert. Those peanut butter cups of hers do sound good. Does Deanna just melt chocolate in a muffin tin and then mix peanut butter with sweetener and then add a final layer of melted chocolate? I saw a link on this site for the Vegan Lunch Box. It was really quite an impressive blog. I was intrigued by the Vegan Twinkies. I never licked Twinkies when I was a kid and since I really look at food labels for nonvegetarian additives, chemicals, fructose and white sugar, etc. I could never get near them now. Her recipe did look good though and the picture looked exactly like a real Twinkie. I got the ingredients. I did not have enough time to make them a few days ago so I asked my wife to do it. I told her to be sure to beat the ingredients. She made them but they wwere lucky to be 3/4 inch high( in a muffin tin). She has ahabit of improvising, which is not necessarily a bad trait. However, you have to have some idea of the cheemistry involved and what you can get away with. for instance, it is extremely hard to mess up a soup because they are so forgiving. It is extremely easy to mess up making hard or soft candy because it is so exacting. Her " Twinkies " did taste good but were not as light as they should be. She sometimes makes burgers and thinks that you can just take leftovers like oatmeal and a few veggies and they will come out like Gardenburgers. Sometimes, she will bake and ot didn't turn out quite right. I'll ask her " What did you substitute? " She will say nothing and then I'll have her list the ingredients she used and it will be sometthing like stevia instead of sugar. That can change the recipe a lot. Are you talking about those very high speed mixers for whipped cream? Where do you get them? Right now, I use a Vita Mix for a blender but I don't think it makes whipped cream out of skim milk. I is a pain to get the stuff at the bottom by the blades. GB Re: Hi GB desserts would glady settle for bowls and bowls and bowls of whipped cream -- actually can make some great stuff using skimmed milk at the right temperature with one of those whipper thingies -- wish I could find pineapple pudding and make pineapple chiffon pies like my mom feed me as a kid -- Pepperidge Farms use to make an interesting cake -- oh dear now I am really in the mood for strawberry shortcake -- gotta get some nutrition -- Relax. I find that making a sweet bread and freezing it in slices helps me. I will enjoy a slice a day instead of half the loaf. I do the same thing with cookies, freeze them by twos. I don't usually sub too much when I bake, I know it's easy to wreck a cake. I'm good with sweet breads, have made them for so many years that if I want to sub a fruit for another fruit I can pretty much tell what's going to work for me.
