Guest guest Posted March 21, 2006 Report Share Posted March 21, 2006 Crunchy Oatmeal Wafers These whole grain cookies make a great snack when you are craving something a little sweet. 1 1/2 cups rolled oats 1/4 cup all-purpose flour 1/4 cup whole wheat flour 1/4 cup firmly packed brown sugar 1/2 teaspoon cinnamon 1/8 teaspoon salt 1/2 cup unsalted margarine, melted 1 tablespoon maple syrup Preheat oven to 375 degrees. Mix together the oats, flours, brown sugar, cinnamon and salt in a medium-sized bowl. Add the melted margarine and maple syrup to the dry ingredients, mixing well. Drop the dough by teaspoonfuls, 2 inches apart, onto lightly greased baking sheets. Bake for 8 minutes or until lightly browned. Remove the cookies from the oven and let them harden on the baking sheets for 2 minutes before transferring to wire racks to cool. Makes 40 cookies.
