Guest guest Posted March 20, 2006 Report Share Posted March 20, 2006 Potato Salad and Olives (from Meatless Meals for Working People) 4 large white potatoes, peeled and cubed water 10 oz. box frozen mixed vegetables 1 sm. onion, finely chopped 1/3 cup black olives, drained & sliced 1 tsp. celery seed salt & pepper to taste 1/2 cup eggless mayo Cover potatoes with water and cook until tender, drain. At the same time, cook mixed vegetables in a separate pot until tender, drain. Mix the other ingredients together in a large bowl. Season and add mayo according to your taste. Variations: Instead of frozen vegetables, add raw vegetables such as finely chopped celery, and or carrots. Add finely chopped parsley.
