Makes a lot. Great to brown bag the next day (and for many days thereafter). :-) Cooked elbow macaroni or pasta of choice (I use whole wheat elbows) 1 can dark red kidney beans drained 1 can chick peas drained Sugar snap peas 1 Red Pepper 1 Green Pepper Broccoli Shredded carrots Zucchini Sliced black olives 3 cloves garlic pressed Low Fat Cheddar cut in small cubes Balsamic vinegar Olive oil Salt Pepper Cut veggies into bite sized pieces, add to elbows and add dressing ingredients to taste.
