I made this for dinner and it was a smash.

 

I added one jalapeno, minced. Sissy

 

Cheese & Vegetable Frittata 4 cups frozen mixed vegetables 6 eggs or egg

substitute 1/2 tsp. each salt 1/2 tsp. dried basil 1/2 tsp. dried parsley

flakes pepper, to taste 2 tbsps. vegetable oil 1 medium onion, sliced 2

to 3 cloves garlic, minced 1 cup shredded cheddar or a spicy jack I added a

lil hot sauce, 3 or 4 shakes (I did 8 shakes-Sissy) In medium saucepan,

bring 2 cups salted water to boil. Add frozen vegetables and cover. When water

returns to boil, drain vegetables in a colander. Cut larger pieces of

vegetable. Beat together eggs, salt, basil and pepper until just blended. Heat

oil in 10-inch non-stick skillet over medium heat. Add onion and garlic. Saute

until onion is tender, about 3 minutes. Add vegetables. Saute until vegetables

are hot. Pour eggs over vegetables in skillet. Reduce heat to medium-low.

Cover and cook until eggs are almost set. Sprinkle with cheese. Broil until

cheese melts, about 1 minute. Makes 4 servings.
